Who said spaghetti & meatballs can't be healthy and vegan! Who ever thought of zoodles is simple a genius! I don't even know if Italian G-mas can compete with this delicious dish...actually I take that back, too bold of statement haha. In addition to this bomb meal, I got a new lens for my birthday thanks to Savva! Woo! So hopefully my photos are looking a little bit better. Quinoa & Bean Stuffed Collard Greens

Black eyed peas, bacon, New Year's Day, and dollar bills come to mind when I think of these dark leafy greens, maybe because I am from the South, who knows?  However, there is so much more to collard greens, they are extremely versatile, have a very mild, almost smokey flavor, are large in size, and are a thicker leaf that holds up well in heat. They can be chopped & sautéed with olive oil, onion and spices for a side dish, used as a wrap for hummus, avocado and tomatoes, or stuffed & baked like we did above!

Oh man what a day and yes I did eat all three, Savva wasn't home so I mean... they couldn't go to waste! Lentils, black beans, edamame, quinoa, beets, garlic, sweet potatoes, avocado, tomatoes the list of veggies continues. I really love veggie burgers for that reason, it's just a big sandwich full of vegetables that is savory, full of different textures, and has so many different variations. Pair one of these bad boys with sweet potatoes fries and maybe a side of massaged kale ceasar salad and oh man you're set!
